Ushpellow is a Bukhari dish, a lot of people call this dish Plow, so to avoid any doubt – it’s the same thing.
It was Friday and I wondered what to cook for Shabbat dinner, and as I had said before, I had an hysterical amount of carrots in the fridge. All of a sudden, I remembered my aunt who makes a great Ushpallo . This is a Bukhari dish that can be prepared with meat or chicken. I prepared this dish using chicken breast.
It is an impressive, fancy dish and can be suitable for Shabbat, holiday days and special occasions.
Ingredients
3 cups of rice
2 onions
6 carrots
1 teaspoon of turmeric
1 teaspoon of cumin
3 teaspoons of salt
2 whole chicken breasts, cut into cubes (1.5 inch x 1.5inch)- you may use chicken drumsticks (about 8-12)
3 tablespoons of oil
Instructions
1. Sock the rice in a bowl for an hour
2. chop the onions into small cubes and cut the carrots into thin fingers
3.In a deep pot, heat the oil and fry the onion well
4. When the onion is brown, add the chicken breast cubes and fry it lightly from all sides
5. Fill the pot with water, add a teaspoon of turmeric, a teaspoon of cumin, 2.5 teaspoons of salt and bring to a boil
6.When the water is boiling, simmer and cook for another 15 minutes
7. Take a sieve, and over a deep bowl or another pot (at least the size of the pot), pour the content of the pot into the sieve: the goal is to keep the cooking liquid to be used later.
8. Drain the rice
9. In a Teflon pot, 10 inch arrange the following layers: at the bottom of the pot, place the chicken breast and the fried onion. On top of it spread the carrot fingers, and then the rice
10. Carefully add the cooking liquid. It is best to do it with the help of a ladle, so that the layers will remain as they are, and won’t get mixed.
The water should cover the rice by half an inch.
11. Bring to a boil and simmer. Cook on medium to low heat for another 20-25 minutes.
When ready, turn over on p a wide-brimmed tray
Notes
If you are cooking chicken drumsticks you should cook them in stage 6 for an hour at least (hour and a half top)

October 19, 2017 at 10:05 pmLooks so yummy! My daughter does not like cumin. Is the cumin a strong taste in this dish. I made a chicken dish with farro and cinnamon. The recipe called for cumin and I added it. Fortunately it was not overpowering.

The cumin is not strong taste, but if she doesn’t like it, you don’t have to add it..
