Sweet Chili Pineapple Chicken-One Pot Meal

When Dima and I got to Phoenix AZ, Dima’s coworker helped us with all the absorption process: the SSC admission, MVD, the bank et cetera.
The coworker’s wife was in a progressive month of pregnancy, and when after she had gave birth, I really wanted to help her because we were so grateful. I didn’t know what is considered as appropriate. In Israel when a woman has a new baby- it’s like an array of war. Everyone comes to help the new mommy: doing the dishes, the cooking, the laundry, the cleaning and even staying with the new baby so that she could take a little nap.
I was wondering if it was ok to cook for her, both of their parents are so far away, and she did not have any help.
I was worried that my help would be interpreted as rude or an Invasion of privacy, because although both countries (US and Israel) are developed ones, there are a lot of differences in culture.
Luckily, I have had someone to consult with. I called Dee, she was a new friend of my mine (today she is my American mom), and asked if she had a moment for a “quick question”- and I asked her if it was appropriate to offer my help.
She said it was a wonderful idea, and she explained me that americans usually cook for someone who is grieving, and maybe it’s not a common thing to suggest- but still it’s a good idea.
I texted the new mommy , and to my surprise she accepted my offer immediately.
Americans  are so polite- much more than the  Israelis, and I was concerned that she will be unconfutable with my offer.
Anyway, I was glad that she agreed to accept my help.
Now, I got panic, what  will I cook? The american kitchen is very different from the Israeli one.
Then, I remembered a fabulous recipe that my mother usually cooks when she has young guests with sweet tooth.
This recipe is easy and delicious. Usually I would add white rice on the side, but because it wasn’t for us, and it was for americans, I tried to adjust my cooking to them and I added small potatoes instead.

Sweet Chili Pineapple Chicken

Serves: 8 Cooking Time: 60 Minutes

Ingredients

  • 8 pieces of drump stick chicken
  • 8 garlic clove
  • ½ cup of pineapple/ apricot/ orange jam
  • 1 cup of sweet chilies
  • 1 teaspoon of fresh ginger
  • ½ cup of hot water.
  • small potatoes (optional)
  • Shallots onions (optional)

Instructions

Clean the drump stick chicken from the skin.

Slice the garlic clove to thin slices.

Set up the drump stick chicken, the small potatoes and the Shallots onions in the pot.

Add all the other Ingredients and for the first 10 minute cook on high heat, after everything is boilin, lower the heat, cover with a lid, and cook for an hour and half.
