One of Dima’s and mine greatest pleasures while we stuck at quarantine is sitting in the end of they day to watch TVwith crackers and Greek yogurt with jalapeno sauce.
The jalapeno sauce is super healthy, Greek yogurt is awesome and the only problem are the crackers. Full of sodium, white flour and unhealthy fat. I tried to cut us vegetables that we could dip them Greek yogurt but it’s just not the same. So I made these awesome spelt crackers and it a hoot! Hope you will like it as we do!
Recipe
3 of cups whole spelt flour
Half a cup of olive oil
½ – ¾ cup of water (start with half a glass and if necessary add more)
1 tablespoon of salt
1 teaspoon of sugar
1 teaspoon white vinegar
½ cup of sesame seeds
2 tablespoons of flaxseed
1 tablespoon of chia seeds
½ cup of pumpkin seeds
¼ cup of black sesame seeds
Preparation
1. Put everything in a bowl except the black sesame seeds and mix (manually or with a mixer) until a uniform dough is obtained.
2. Divide the dough into 3 balls and roll each ball into a thin rectangle, at this point sprinkle the black sesame seeds and roll over it only once.
***By the way – a friend gave me a great tip for rolling out dough: Moisten the surface with a little water, put a baking sheet and roll the dough on it. The revolutionary innovation is the “gluing” of the baking sheet to the surface so that while you working with the dough it will not move.
3. When the dough is thin, cut it to whatever shape you like (sticks, triangles, rectangles, squares) and bake it for about 13 minutes in an oven preheated to 350F\180 C.
4. Take out the crackers and let them cool
5. Serve with any dip you love
