Salmon in pesto sounds like a common recipe, but I didn’t think of making such a dish until I ate one.
The truth is that I wanted to publish this recipe long time ago. Mainly because it’s a hoot and really easy to make.
About two years ago, a couple of friends of us, Michal and Max (hi friends!) invited us to lunch on Saturday. Our humble friends always underestimate their culinary abilities – but they always surprise us.
I learned this recipe from them – I hope you would like it as much as we do.
Ingredients
1 whole salmon fillet (about 2 lbs)
2 jars of prepared pesto (about 400 gr. in total)
2 crushed garlic cloves
5 tablespoons of olive oil
salt to taste
3-4 cups of cherry tomatoes
A bag of ready gnocchi (500 grams)
Preparation
1. Boil water in a pot and cook the gnocchi according to the manufacturer’s instructions
2. Meanwhile, put the pesto, salt, garlic and olive oil in a bowl and mix
3. Cut the cherry tomatoes into half and add to the bowl
4. Drain the gnocchi from the water and add them to the bowl – and mix everything together
5. Put the salmon on a tray and make deep cuts in the fish to divide it into pieces (do not cut all the way)
6. Put the mixture from bowl around the fish and use your hands to insert the pesto between the cuts
7. Bake in a preheated oven at 180 C (355 F) degrees, turbo, for about 20-22 minutes
