If there is something I have learned from Americans, (besides standing in lines), is how to cook meat!
I really learned how to enjoy meat in the US- I’m a late bloomer, what can I say.
One of my favorite things is baked brisket. I made a brave attempt last weekend and tried to cook brisket in the oven – and guys- it’s came out awesome.
It’s not the classic Texas style smoke brisket, cause well, I don’t have a smoker in my apartment- but it’s still a great success. Hope you would like it as I do.
Ingredients
4 pounds of brisket
1 tablespoon of black pepper
1 tablespoon of sugar
2 tablespoons of honey
1 tablespoon of grain mustard
6-8 stalks of rosemary
1 tablespoon of garlic powder
6 cloves of garlic cut into 2
1 tablespoon of salt
Preparation
1. Preheat the oven to 300ºF \ 150ºC
2. For the sauce\rub: In a bowl, mix together the black pepper, salt, honey, sugar, mustard and garlic powder
3. Spread the mixture generously over the meat and let it sit in a room temperature for about an hour
4. Place a large piece of aluminum foil in a roasting pan and spread half of the rosemary stalks and the garlic cloves
5. Place the brisket on the aluminum foil and spread on top of it the rest of the rosemary and garlic cloves
6. Wrap the brisket in the aluminum foil so it’s well sealed, like a package.
7. Place an oven rack in the middle of the oven and bake for 4 hours and 45 minutes for a 4 pound roast (1 hour and 15 minutes for every pound)
8. Remove from oven and let rest in the foil for 30 minutes before serving
9. Slice and serve!
