Salad with oranges? Its not a mistake. It’s great. Trust me.
We returned from Israel two weeks ago. I planned to eat there in all my favorite restaurants. I also planned to write a post or two about them. A kind of tour guide for my holly land. But our visit was pretty short, and Passover stood in our way. We were mostly at home with our families, and I ate mostly cottage cheese. Don’t laugh, it taste so good. I don’t like the American cottage cheese.
After a million hours of flight, we landed in Phoenix at 97 degrees, and the summer did not even started. Any way, we have the sweetest old neighbor who brought us a big bag of oranges from his tree. It was perfect for this kind of weather, cause I rather not eat or cook “hot meals”, so I improvise this salad – hope you would like it!
Ingredients
- 2 Oranges
- 1 cup of cherry tomatoes
- 1 small red onion or half large purple onion
- A handful of mint leaves
- 1 Tablespoon of olive oil
- Salt by taste
Instructions

Peel the oranges and cut them into cubes and place in a bowl.

Cut the cherry tomatoes into halves, chop the red onion into small cubes and add to the bowl.

Wash the mint, add to the bowl and season with olive oil and salt to taste.
