Any recipe that contains wine sounds fancy right? Well, this recipe is really fancy but easy to make (like most of my recipes); before we start, a short story.
Two weeks after we had arrived to Phoenix, AZ , Dima’s company brought us tickets for a PBR (Professional Bull Riding) show.
To be quite frankly guys, I didn’t know how cruel it really is. There is a man whose whole job is to tie the bull’s testicles and hand the rope to the rider. The bull is obviously annoyed and angry (the rider grabs him by the balls!!!), kick the rider down, and when the rider falls, the grip loosens up and the bull relaxes.
Dima introduced me to all kinds of people, and Dee, a wife of one of the people in the company started talking to me. She told me that she eats healthy “like in Israel” and that she would be happy to meet me some day; we exchanged phone numbers and agreed to keep in touch.
About two weeks later, I called her and asked if she wanted to meet – she said yes and it was so much fun!
She is 30 years older than I am, born on the same birth date as mine, and ever since I met her, I’ve had a lot more fun in Phoenix Arizona.

We share the same worldviews, the same interests, we go to second-hand stores together, to antique shops, to restaurants that serve healthy and delicious food (which is not easy to find in the US if you’re not local), she even took me to a doctor when I was sick and Dima was at work.
Today I call her “my American mother” – because that’s how she treats me, with a lot of love and caring.
Since her visit to Israel, Dee and her husband have made a conceptual change regarding food. In the United States it is very hard to eat healthy (I gained 12 pounds here and hasn’t eaten even one pastry at Starbucks yet), and she decided she was making a change.
One Friday I invited them to Shabbat dinner. I started to wonder what to cook, they don’t eat wheat flour, sugars or red meat. When we started the Detox, I thought it was very similar of their diet.
So I made hummus, tahini, Turshi, Moroccan fish, the famous rice and decided to prepare my mom’s recipe for chicken in wine.
Ingredients
- 8 pieces of skinless drum- sticks
- 2 baskets of champignon mushrooms
- 8 garlic cloves
- 1 1/2 glasses of wine (don’t to be cheap – pick a fine wine)
- 1 onion
- 1 teaspoon of dry / fresh thyme
- Salt and pepper to taste.
- 2 tablespoons of olive oil
Instructions

First a slight cutting work:

Thinly slice the mushrooms, garlic cloves and onions .

Heat 2 tablespoons of olive oil in a low, wide-faced pot..

Put the onion slices in the pot and when it is brown, add the chicken, salt and pepper, and fry it well on both sides.

Add the thyme, the mushrooms and the wine and bring to a boil.

When the pot is boiling, simmer and cook for another hour and a half.
