I met this salad at my brother’s ex-wife parent’s house. It was a family gathering before their wedding somewhere in 2008 (or was it in 2009?). Although the salad there contained led nuts, but the general idea is the same.
So this recipe for super healthy, green salad. It’s not exactly low on calories thanks to the nuts but still it is tasty!
Ingredients
- 1 bunch of cilantro
- 1 bunch of parsley
- 1 bunch of chives
- Juice from 1 lemon
- 50 gr. Of cashews
- 30 gr. Of sliced almonds
- 30 gr. Of pumpkin seeds
- 30 gr. Dried cranberries
- Salt to taste
Instructions

Chop thinly the cilantro, the parsley and the chives and place in a bowl

Cut the cashews into big pieces and add them to the bowl together with the cranberries, the pumpkin seeds and the almonds

Add the lemon juice and salt mix and server
