It has been over four months since the Detox. Still eating mostly healthy. Trying to avoid any industrial and processed food, and mainly we feel better. I had already mentioned here that the Detox recipes about dinners and actual cooked meals were not entirely new to me. I cook pretty healthy anyway. The real change happened regarding sweets.
Both Dima and I prefer to eat food rather than just snacks, but after eating a meal we always need a tasty snack. And instead of chocolates bars, or chips, I make the healthy sweets we learned from the Detox.
The next recipe, date truffles, borrowed from Hagar Shefer’s “Clean-eating” app, but I changed it to suit our taste and to the products we usually have at home. And before you rush to rule out these truffles- try them. Dima claimed he did not like dates until he tasted these chocolate flavored truffles. He did not even notice that I put dates, so you have to try it!
Ingredients
- 8-10 dates
- 1 cup of walnuts (120 grms ), you can use cashews / almonds / pecans or any other nuts you have.
- 5 tablespoons of espresso (I finally found out what to do with the decaf capsules.)
- 4 tablespoons of natural maple syrup / agave
- 4 heaped tablespoons of high quality cocoa powder
Instructions

Place all the ingredients in a food processor and grind until smooth. I use the Ninja blender that I have, but I admit, it is not strong enough, and I usually divide the mixture it into two, and grind each amount separately and then mix everything in a bowl.

Wet your hand with water and create chocolate balls.

Refrigerate for 20-40 minutes.

Before serving, you can sprinkle with powdered cocoa / ground coconut or colored candies.
