Great Recipe for an Empty refrigerator: Chicken with Carrot and Onion

Hi guys! I’ll make it short, because my cousin, Maayan, said I have the tendency to speak (or should I say write) too much about certain recipes, and that I should just get to the point and write the recipe itself.  Well… I like to talk, that for sure 🙂
Anyway, when my mother was here and we returned from one of the trips, it was Sunday evening, meaning that the next day Dima was going to work. Dima takes food from home to work, because it is healthier than anything he can get outside.
The refrigerator was sad. I tend to empty the refrigerator gradually before we go on a trip because I do not like to throw away food. It was late, and I did not have any intention to go to the store, nor did I really intend to stand in the kitchen for an hour.
I had some chicken carrot and onion, and it turns out that this is a recipe for success. Also, it takes only about 10 minutes to prepare it.

The first time I made it, I used a sweet chili sauce I had in the fridge, but since the Detox I’ve tried not to use premade sauces, so I use honey mixed with crush chili – Dima did not notice the difference so for me it’s a good alternative.

Serves: 6 Cooking Time: 10 minutes

Ingredients

  • 1 1/2 tablespoon of paprika
  • 1 teaspoon of turmeric
  • 1/2 cup of sweet chili or 1/2 cup of honey with 1 tablespoon of red crushed chili.
  • 1 large onion
  • 1 large carrot
  • 8 pieces of skinless drum stick chicken

Instructions

Place the paprika and turmeric in a bowl, mix well and add the chicken. Make sure the chicken is well coated from all sides.

Slice the onion into 1 cm slices and spread it in a baking pan.

Arrange the chicken on top of the onion.

Peel the carrots and cut them into thin fingers with a peeler, and spread the carrots on top of the chicken.

Mix the sweet chili or the honey with the red crushed chili and mix it with a quarter cup of hot water and pour the solution over all the chicken evenly.

Cover first with a baking sheet and on top cover with aluminum foil and bake in the oven for 1 hour and 15 minutes on 355 ℉.

Remove the baking sheet and the aluminum foil and bake the chicken for another 15 minutes.
