These oatmeal & chocolate cookies – are so good!! I love to make this recipe, mainly because I always have all the ingredients at home and they do not require a lot of work, just a bowl and a spoon.
My Noam is sick again. There is nothing more frustrating than a sick child. The doctor brought him antibiotics which of course should be taken with food. And as I mention in many posts before Noam barely eats. What the hell I can feed him while he sick??
I tried to feed him many things and he refused it all. Spoiled brat. So I pulled out the big guns: these cookies.
I can pretend that these cookies are healthy because they contain oats but to be honest they are not really health. But they are delicious and Noam is ready to eat them, and that’s enough for me.
Ingredients
1 cup of all purpose flour
3 cups of rolled old fashioned oats
2 eggs
220 gr. of coarsely chopped chocolate ( about 8 OZ) you can use any chocolate you like
3/4 cup of sugar
200 gr. of soft butter ( 1 stick and 6 TBSP)
A teaspoon of baking soda
Half a teaspoon of salt
A teaspoon of ground cinnamon
Two teaspoons of vanilla extract
Preparation
1. Preheat the oven to 180º C \ 350º F
2. Chop the chocolate coarsely
3. Whisk in a bowl the dry ingredients : the flour, the oats, the sugar, the baking soda,the ground cinnamon, the salt and mix
4. Add the wet ingredients to the bowl: the eggs, the butter, the vanilla extract and mix
5. Add the chocolate and mix – at this point it is recommended to mix with your hands so that the mixture will be uniform
6. Form small circles out of the dough and place them in a pan lined with baking sheets
7. Lightly mash them with your hand or with a fork and put it in the oven
8. Bake for about 12 minutes and let cool

Honestly I never tried to convert butter with oil in this recipe. But I’m sure you can use vegetable oil, or coconut oil. I do it all the time in other cookies and cakes.
200 gr. Butter = 180 ml oil
