Baked Salmon Fillets with Tomatoes and Garlic Recipe

 Last Friday we surprised my parents and came unannounced. My mother was panicked because she just made a roast for Shabbat dinner. After all, she did not expect us to come. She pulled salmon out of the freezer and asked me to make it.
So I made this baked salmon fillets with tomatoes and garlic recipe, which is so easy and delicious and really does not require any preparation in advance. Hope you would like as I do.

Ingredients

4 pieces of salmon fillets
5-7 of rosemary stalks
6 garlic cloves
2 tomatoes
5-6 sun-dried tomatoes
Spoon of thyme (fresh or dry)
table salt and coarse salt to taste
1 lemon

Instructions

1. In an oven safe Pyrex,  place 4-5 stalks of rosemary on the bottom
2. Place the salmon fillets on the rosemary, skin side down
3. Slice the garlic and tomatoes into thin slices
4. Sprinkle table salt on the salmon fillets
5. Arrange sun-dried tomatoes and garlic on each piece of salmon

6. On top of each piece of salmon pour a teaspoon of the oil of the sun-dried tomatoes
7. Sprinkle the thyme on top of salmon. I did not have fresh thyme (my mom is a plant killer) and I used dry thyme
8. Squeeze a whole lemon over the fish
9. Slice tomatoes into slices of about a quarter of an inch and arrange over the fish
10. Sprinkle coarse salt to taste over the tomatoes and place on top another stalk or two of rosemary

11. Cover with aluminum foil and place in a preheated oven at 180º C \ 350º F for 25 minutes
12. Remove the foil and continue to bake for another 10-15 minutes so that the fish and tomatoes are browned on top. If you are using  broil, be alert so that it does not get burn.
