My mom usually prepares this mushrooms quiche recipe for Shavuot (dairy holiday), and it’s definitely one of my favorites!
It may seem complicated, because it has more than five ingredients, but the truth is easy to make (it was my first time too).
Ingredients
Ingredients For The Crust
100 gr. soft butter
1 1/2 cups of all-purpose flour
1/2 of teaspoon salt
1/4 cup of lukewarm water
Ingredients For the Filling
2 large chopped yellow onions
24 oz. of Champignon mushrooms
2 eggs
1 heavy cream (8 FL OZ)
1 sour cream (8 FL OZ)
3 cups of grated cheese (mozzarella\ white cheddar)
4 tablespoon of all-purpose flour
Salt and pepper to taste
2 tablespoons of olive oil for frying
Instructions
Let’s start with the crust preparation:
1. Mix all ingredients until the dough is soft and not sticky
2. Wrap the dough in saran wrap and put it in the fridge for half an hour
After we have prepared the crust we will turn to making the filling:
1. Heat the olive oil in a frying pan, and fry the onion until browned
2. Add the mushrooms
3. In a bowl mix the rest of the ingredients – except half a cup of mozzarella
4. Add the mushrooms and onion to the bowl and mix well
5. Unroll quiche crust and press into a 10-12″ round pan and pour the filling on the crust
6. On top of it, sprinkle the remaining grated mozzarella
7. Put the quiche in a preheated oven at 350F°\ 180C° and bake for about 50 minutes until it golden.
8. After baking, turn off the oven and leave the quiche in the oven for another 10 minutes.
